happy weekend! + guac

i had to post this because well look at how gorgeous it is!  i made an avocado aioli with this one but my favorite (& semi homemade) guac recipe is below.

and please don’t tell me that you don’t like guac until you try this.  then we can talk.

the guac

  • 3 avocados (make sure they are ripe by pressing on the skin – there should be some give. it should not be mushy or hard.  i usually end up looking like a crazy person because i feel them all and then pull out the ones i like)
  • 1 lime
  • salt
  • a couple of garlic cloves
  • small handful of chopped cilantro (optional – i use it if i have it but i’ve left it out plenty of times too)
  • 2 heaping tablespoons of fresh made salsa – not the in the jar stuff (we like the kind the sell in the produce section of the supermarket – or you could make your own, i just like how the fresh salsa at the store has the veggies all teeny tiny sliced)
in a medium bowl use a fork to smash the avocado, garlic, salt (to taste), and juice of one lime.  i am sure that you could put it in the food processor but i like my guac rustic.  so smash away until you have a consistency you like. then mix in the salsa – if you like more veggies in yours then add some more salsa!  if you need a little more heat you can always pop a jalapeno in there.
the most important part of this recipe is to CHIILL YOUR GUAC for at least 2 hours.  all the flavors will come together and the guac will be cold and delicious and everyone will thank you for saving their. life.
