you know those times where digging your hands into raw ground beef is the last thing you want to do?
well – i have a solution.
how did i not think of this before?! no more raw meat under my fingernails! no more freezing hands! AH!
despite the 90 degree heat i came home tonight and whipped up a batch of pioneer womans meatballs. that lady is a godsend i tell you. have you ever made any of her recipes? if not i highly suggest. i have never made a bad supper when i do what PW says. maybe it has something to do with the butter?
at any rate – best experience ever. slip on gloves, add ingredients, listen to fleet floxes, sing along and then use a cookie scoop – yes i said COOKIE SCOOP – to dish out the meatballs. gross? not at all. gorgeous uniform balls all sitting on top of the cookie sheet (or stoneware to be exact).
i lamed out tonight and baked them in the oven instead of browning them in the dutch oven. it was hot. i was feeling lazy + i still had to whip up a batch of granola. so 400 degrees for 22 minutes and the little balls of goodness were done. coll for about 10 minutes and then put the whole cookie sheet in the freezer to flash freeze them and then into a ziplock freezer bag for safe keeping until i need to pull out an easy dinner.
our favorite at the moment: seeds of change tikka masala sauce and basmati rice. found in the international isle at whole foods.
